Transcript Partial transcript

Machine transcription of this recording. The words are the recognizer's, except where a passage is marked as corrected or machine re-recognized; most have not been checked against the audio, so words, numbers and names can be misheard. It describes what was said. It cannot establish who voted how, an amount or an outcome. A time links to its passage, and “Copy link” copies that link. “▶ Play” opens the recording at that moment, on YouTube; on this page it moves the player above the transcript.

Speakers were separated by voice. A plain name rests on evidence tied to that voice; “provisional” is a name from an earlier text-only pass and is not verified; “Speaker N” is an unidentified voice.

So Jerk Flavors offers the most authentic Jamaican food that you're going to find. You know what

I

mean? We try our best. Most of my spices, our spices, spices that our parents used to use. I import them from Jamaica to make sure we capture the authentic taste. I can't give it a secret but I can tell you it's real. It's probably the best. We decided to open our business in Cocoa. It was like the best possible spot. We were down south and it was saturated with a lot of Jamaican restaurants, you know. So we figured here there were very few and you know it's like the best place.

It is ‸ special and it means a lot. When the customers come in, they know my name. They will tell me, you know what I like, you know what I want, so I better remember to serve them their oxtail or jerk chicken or whatever they want. So I try to memorize these things.

you know. It's more low-key. It's not crazy like in the cities like in Fort Lauderdale, Miami, New York, places that we have been. So it's kind of easy adjustment for us. Plus I like farming. You know, a lot of my spices, I grow them for myself. You know, a lot of my vegetables that I eat, I wasn't able to do that in a big city. So you know, for us it's very easy. It's comfortable. It's not noisy. You know, people are friendly. You know, I could talk to my local officials. You know, they're easy to reach.
